Sticky Toffee comes from the Habtamu Gato washing station in the Limu zone of Ethiopia. Sitting just under 1,930 meters, this lot pulls from 109 smallholder farmers working semi-fo rest land, where shade and biodiversity do a lot of the heavy lifting toward a balanced, sweet profile. It’s a standard washed process done well. Cherries are hand-sorted at intake, fermented 20 to 24 hours, then dried on serially tracked raised beds for up to 12 days.
