Originally purchased by Santiago’s family in 1985, the farm has evolved into a specialty coffee operation focused on quality, sustainability, and innovation. Coffee at El Ocaso is grown under shade trees at high elevation, where cooler mountain temperatures allow the cherries to mature more slowly, developing greater sweetness and complexity in the cup. The farm emphasizes environmentally responsible practices including composting organic coffee material back into the soil and using naturally occurring microorganisms to support plant health and soil vitality. Santiago and his team are deeply involved in every step of cultivation and processing, with a focus on consistency, traceability, and showcasing the unique character of the region. TRACEABILITY We source this coffee directly through transparent relationships that prioritize freshness, consistency, and producer recognition. This lot comes specifically from Santiago Patiño’s Finca El Ocaso and undergoes a washed process before being naturally decaffeinated in Colombia using the sugarcane method, helping preserve the coffee’s original sweetness and structure. After processing, the coffee is imported while still fresh and roasted in Tampa using carefully developed roast curves designed to highlight the chocolate sweetness, panela notes, and soft fruit acidity of the coffee. From producer to roaster to customer, every step is intentional, traceable, and handled with care.
