In high dilution, Strawberiff reads as jammy ripe strawberry with a sour, slightly sweaty edge and a faint woody undertone. Concentrated, the sweaty-acidic side dominates and the fruity note retreats so care is needed. Use it in trace amounts to add realism to strawberry, raspberry, blackcurrant and tropical fruit accords. It supplies the fermented-jam character that pure fruity materials cannot achieve alone. It also bridges fruity tops to gourmand bases by adding a sweaty, lactic-fruit nuance. Pair with strawberry glycidate, gamma undecalactone and beta damascenone for a complete strawberry accord. A trace under blackcurrant or passionfruit lifts the natural ripeness without adding sugar. Dose extremely low — one drop too many and the whole composition turns rancid.
