Ethyl Methyl Phenyl Glycidate or EMPG (often called Strawberry Aldehyde or Aldehyde C-16,) is not an aldehyde but rather a glycidic ester which smells of strawberry. It is one of the three most common fruit materials (the others being Undecalactone Gamma AKA Aldehyde C-14, Peach and Nonalactone Gamma AKA Aldehyde C-18, Coconut — also misnomers). While large amounts can be used, this material is very high impact and tiny amounts can be felt through the entire life of a fragrance. EMPG blends extremely well with the aliphatic aldehydes and is particularly nice as a nuancer to rose notes. Blends with ionones are classic. Use it with other fruity products such as Prunol SP or Persicol to create a highly modern gourmand scent.
