We offer seasonally our sustainable Acadian Wild Caviar (the only in the world, adults live and and native in t he Bay of Fundy and migrate in the St. John river for spawning!) and when we run out we switch to our exclusive landbased farmed Acadian Gold or Emerald sturgeon caviar, grown in New Brunswick from the St. John River native shortnose sturgeon. Grown in a natural cycle, our fish are taking the winter off, no feeding, just relaxing, like they also do in nature! Certified sustainable by Ocean Wise.
