“Sul de Minas” refers to the hilly region in the southern part of Minas Gerais state, where this coffee originates.This lot is a blend of two varieties: Mundo Novo and Catuaí. Catu aí is a hybrid created by crossing Mundo Novo with Caturra. Mundo Novo itself is a natural cross between Typica and Bourbon, with origins that can be traced back to Yemen.Together, these varieties produce a smooth and clean cup profile, with notes of chocolate and hazelnuts.In Brazil, the most common processing method—used for about 90% of Arabica coffee—is the dry process, also known as the natural method.
