Sulforaphane is a bioactive compound concentrated most highly in broccoli seeds and sprouts. It is best known for activating the Nrf2 (Nuclear Factor Erythroid 2-Related Factor 2) pathway, which upregulates the body's own antioxidant and detoxification enzymes — including glutathione, superoxide dismutase, and heme oxygenase-1. In whole foods, sulforaphane exists as its precursor glucoraphanin, which converts to active sulforaphane on contact with the enzyme myrosinase (released when plant cells are damaged during chewing or digestion).
