Sumarocca Cava Brut is a traditional-method sparkling wine from Cataluña, made under the Cava DO using the classic indigenous varieties of the region. Like all serious Cava, it und ergoes secondary fermentation in bottle, building the fine persistent bubbles and autolytic character that distinguish it from tank-method alternatives. Expect a dry, crisp style with green apple, citrus and a touch of brioche on the palate — fresh enough to open proceedings but with enough structure to carry it through a first course.
