Answer: We want all of the meat we use, the production processes used to create the products and the labels we use (nutrition panels and claims on packaging) to be fully inspected by the USDA and in turn for all of our products to proudly carry a "USDA inspected" stamp. USDA inspection provides an important assurance to our partner retailers and end customers. In order to get mandatory inspection by the USDA a product is required to contain at least 3% of an "amenable" specie (ie. beef, pork or chicken). Therefore, we add a bit of extremely lean beef or pork to our exotic products. Hope that explains why we do what we do.
