Maftoul is Palestinian couscous. Here, it is handmade the traditional way with whole wheat flour from local heirloom wheat. Women Cooperatives run by mothers who make it the same w ay as they do for their families prepare Canaan’s Maftoul. Traditionally, Maftoul is prepared with chicken stock, tomato sauce and chickpeas, a favorite winter meal in Palestine. Enjoy its satisfying texture topped with your favorite stew, served as a supplement to rice, or served cold as a salad tossed with fresh herbs and dried fruit.
