Surya Salt comes from the Little Rann of Kutch, Gujarat, a low-lying strip of land that touches both ocean and desert. It is produced by the Agariyas, an indigenous community who have been harvesting salt for generations, and have a keen understanding of this unusual ecosystem. Using solar pumps provided by Diaspora Co.'s local NGO partners, the Agariyas harvest this bright, inland salt from the desert’s underground water table. The salt’s high-mineral content is preserved through a slow-filtration process through the desert soil. In partnership with a local women's self-help group, whose members then hand-pound the salt to the perfect texture for everyday use, Diaspora Co. is able to ensure that the salt retains as much flavour as possible. This salt comes from the famous desert salt pans in the Wild Ass Sanctuary and Little Rann of Kutch in Gujarat.
