Tabkha: Recipes from under the rubble The second edition of Tabkha: Recipes from under the rubble by Mona Zahed features two additional recipes alongside twenty-two ancestral recip es, lovingly nurtured and recalled. Mona is a Palestinian chef, author and mother who ran a successful catering business prior to October 2023. As she tried to survive the genocide, ongoing displacement and food scarcity, Mona found the strength to write Tabkha rom her tent in Gaza, while raising her four children with her husband. Since releasing the cookbook, Mona established a scholastic initiative called Amal Al-Mustaqba to provide education and psychological support for children in her neighbourhood. Using the proceeds from this book, Mona started the school in her displaced camp, working with qualified teachers to create curriculums for kids. The initiative has now expanded into a rental space and continues to provide young adults with ways to learn and play without disruptions. Tabkha is published by Slingshot Books and is designed in collaboration with @coffeesforgaza, featuring various designers who helped bring Mona’s recipes to illustrative life. 100% of proceeds from book sales are distributed to Mona so she can support her family and Amal Al-Mustaqba.
