This is a fun release from my friends at Tanat in Paris! We took a stellar yeast innoculated natural Geisha from Lost Origin and put half of the green through Waved's Platform Wavemaker to see what would happen. The result is two slightly different flavor profiles that showcase Lost Origin's meticulous processing on this coffee. Details: Notes: Peach Juice, Raspberry Lemonade, Tropical, Golden Raisin, Dried Mango, Floral Processing: Natural + Yeast Innoculation Varietal: Geisha Boquete, Panama. 1700 MASL I recommend you rest this one for at least 4 weeks before tasting! I envision this coffee to taste really nice with at leaset 6-8 weeks My impressions are here (FYI This coffee is so good that you really can't go wrong with either one) Waved Vibrant + Acidity forward Non-Waved Sweetness + Floral forward I wouldn't necessarily say one is better than the other but rather the cup profile shifts in a different direction. Think of an equalizer showcasing various parts of the coffee/processing and in this case highs vs. mids. In my brief tasting with the folks at Tanat, we found a split between what we all liked. I personally like the Waved version because I love vibrant acidity but I know many of you would prefer the Non-Waved version for this specific coffee. I think more testing is required on various types of coffees, processing, etc. to see what the machine really does but it is interesting to see this type of device exist. Overall, this is a fascinating direction that we're starting to see producers and competitors head in and I'd love to know what you guys think about the taste of the coffee.
