In Tanzania's southern highlands, most coffee farms are measured in acres, not hectares — small plots worked by families who have cultivated the same land across generations. What' s changed in recent years is what happens after the harvest. Centralized processing facilities now receive cherry from dozens of these farms, sorting, depulping, fermenting, washing, and drying with a consistency no single smallholder could achieve alone. Better processing means better prices. Better prices mean the farms endure.This particular lot is a peaberry selection — a natural curiosity where a single seed develops inside the cherry rather than the usual two. The result is a rounder, denser bean that's hand-sorted during milling and prized for the intensity it brings to the cup. Grown at 1,200–1,900 meters in the Mbeya region, the Bourbon and Kent varieties are fully washed and dried on raised beds — a process that preserves the clarity and brightness the altitude builds in.
