Tarrawatta Ambervale Cabernet Sauvignon is a 100% Cabernet Sauvignon from old vines planted in 1968 in Eden Valley, South Australia, bottled at 14.9% ABV in a standard 750ml format. The wine earned 94 points from both Jeb Dunnuck and James Suckling, with Dunnuck highlighting its "complex underbelly of cedarwood, forest floor, tobacco, and violets."Quick Facts: ABV: 14.9% | Origin: Eden Valley, South Australia | 100% Cabernet Sauvignon | Producer: TarrawattaProduction & HeritageTarrawatta acquired the historic Ambervale vineyard in 2017, inheriting vines planted in 1968 that now rank among the oldest Cabernet Sauvignon plantings in Eden Valley. The vineyard sits at the cooler, northern end of Eden Valley, where red loam soils over deep gravelly clay contribute mineral complexity and natural concentration from low-yielding old vines. The wine sees 20% new French oak during maturation, a restrained proportion that lets the site's terroir lead. Tarrawatta shares ownership with Sloan Estate in Napa Valley, bringing a cross-hemispheric perspective to fine Cabernet production.Tasting NotesAroma: Dark cassis and blackberry emerge first, followed by cedarwood and tobacco leaf from the French oak influence. A second pass reveals violets, forest floor, and a distinctive undercurrent of black truffle and pine resin.Taste: The entry is medium-bodied with ripe currant and sour plum, building through a mid-palate of blue fruits, graphite, and wet gravel. Minty herbs and eucalyptus weave through the fruit, while fine, medium-velvety tannins provide structure without weight. Vanilla and clove from the oak integration sit quietly in the background rather than dominating.Finish: Bright and fresh, with lingering cassis and a faint trace of iodide that speaks to the vineyard's mineral-rich clay subsoils. The tannins resolve cleanly, leaving eucalyptus and cedar on a persistent close. How to Drink Ambervale Cabernet SauvignonThis wine rewards patience — decant for 30 to 60 minutes to let the aromatics fully open, then serve at around 16–18°C. Given its medium body and fine tannin structure, it drinks beautifully on its own as a contemplative glass but has enough backbone for the table. Pair it alongside grilled lamb rack with rosemary, where the wine's herbal and eucalyptus notes mirror the herb crust. Aged hard cheeses like a three-year Comté bring out the cedar and tobacco complexity. Slow-braised beef cheeks with red wine jus complement the cassis and plum fruit core without overwhelming the wine's elegance.Best For Gifting a serious Cabernet collector seeking Australian old-vine expressions Anchoring a comparative tasting of Eden Valley versus Barossa Valley reds Cellaring for medium-to-long-term aging given the tannin structure and acidity A special-occasion dinner wine paired with red meat or game Frequently Asked QuestionsWhat does Ambervale Cabernet Sauvignon taste like? It is a medium-bodied Cabernet Sauvignon defined by cassis, sour plum, and blue fruits, layered with cedarwood, graphite, eucalyptus, and a distinctive mineral quality from its old-vine Eden Valley source. Fine, velvety tannins and bright acidity keep the wine fresh and structured rather than heavy. How does Ambervale compare to Sloan Estate Proprietary Red? Both wines share the same ownership group and a focus on premium Cabernet Sauvignon, but Ambervale is a single-varietal, single-vineyard expression from cool-climate Eden Valley, while Sloan is a Bordeaux-style blend (typically 80–85% Cabernet Sauvignon) from the warmer Rutherford bench in Napa Valley. The Ambervale tends toward a more restrained, mineral-driven profile with herbal complexity, whereas Sloan delivers richer, more concentrated dark fruit typical of Napa.Is Ambervale good for cellaring? Yes — the combination of fine-grained tannins, bright natural acidity, and restrained new oak suggests a wine built for medium-to-long-term aging, and the concentration from 1968-planted vines provides a deep fruit core to support extended cellaring.Where is Ambervale made? The wine comes from the Ambervale vineyard in the cooler, northern end of Eden Valley, South Australia, a sub-region within the broader Barossa zone known for producing more elegant, structured reds than the warmer Barossa Valley floor. What foods pair well with Ambervale Cabernet Sauvignon? Grilled lamb cutlets with rosemary echo the wine's herbal and eucalyptus notes. Slow-braised beef short ribs complement the cassis and plum fruit. Aged Comté or Gruyère draw out the cedar and tobacco layers. Venison loin with juniper berry sauce matches the wine's mid-weight structure. Dark chocolate with a high cacao percentage (70%+) pairs with the graphite and violet aromatics. What sizes does Ambervale come in? The standard release is a 750ml bottle. Is Ambervale worth the price? Ambervale positions as a premium, limited-production Australian Cabernet Sauvignon backed by dual 94-point scores and sourced from vines planted over five decades ago — factors that place it competitively among serious Eden Valley reds and justify its standing in the upper tier of Australian Cabernet. Why Ambervale?Old vines are the headline here: Cabernet Sauvignon planted in 1968 on red loam over gravelly clay in one of Eden Valley's cooler pockets. That vineyard pedigree, validated by 94-point scores from both Jeb Dunnuck and James Suckling, puts Ambervale in rare company among Australian Cabernets that combine site-specific minerality with genuine complexity. The restrained 20% new French oak regime lets the vineyard speak — graphite, wet gravel, and eucalyptus alongside pure cassis fruit. For collectors and drinkers looking beyond Coonawarra and the Barossa floor for top-tier Australian Cabernet Sauvignon, this Eden Valley expression makes a compelling case.
