Our desire for perfection has led us to create this knife, which is even sharper, more beautiful and more comfortable than the previous generation, while still offering the same extraordinary fun factor when cooking. This knife is full of history and generations of experience from professional blacksmiths who created a new standard of craftsmanship. Instead of using a high-carbon steel blade, this full tang knife is made of hand-forged VG10, which is layered by 67 layers of Damascus steel. This makes our Tatara Evolution Pro easier to maintain due to the increased toughness as well as corrosion resistance. The complex vacuum heat treatment procedure gives this knife a hardness of 60 ± 2 HRC. This provides extreme and long-lasting sharpness while making the sharpening process easy for you. The Tsuchime look not only makes this knife stand out, but also ensures less adhesion of the sliced food to the blade. Due to the special shape of the blade, you can use the first three quarters for slicing and chopping fine vegetables and meat, while the last quarter is perfect for chopping chicken, duck and other tough cuts of meats.
