Handcrafted and brewed in small batches – without additives, heavy filtration or sulphites. Each batch is slightly different, each bottle is individually numbered. Made from low-polished Carnaroli rice (90 %). Still – bright and fruity on the nose, with yuzu at the centre and a faint savoury undertone. Creamy and rich on the palate, balanced by medium acidity, distinct yuzu notes, nashi pear and a subtle trace of caramel. Soft and almost dessert-wine-like, with a delicate bitter finish. The clear and zesty yuzu note comes from a short infusion with yuzu peel from Agrumes Schaller. Batch of 493 bottles. Keep refrigerated, serve chilled. As our sake is unpasteurised, it continues to develop in the bottle. For slow development, store in the refrigerator (ideally < 5 °C). This keeps the taste stable for 6-12 months. Even after this, our sake remains enjoyable, usually with a softer, mellow profile. If you have received our sake by post, leave it to rest in the fridge for a while – it is then ready to drink when chilled. Ingredients Water, rice, koji, yuzu.
