Tofu Vegetable Quiche Serves 6 3 cups water 1 cup of teff grain 1 lb firm tofu, blended until smooth 1 tbsp umeboshi or red wine vinegar 1 tsp dried basil or 1 bunch fresh dill 1 tsp olive oil 2 cloves garlic, minced 1 onion or leek, sliced ½ lb mushrooms, sliced 1 stalk and florets of broccoli, sliced or 2-3 leaves of kale, sliced or a small bunch of asparagus, sliced. Preheat oven to 350F Boil water and add teff grain plus a pinch of sea salt. Simmer for 15 minutes uncovered or until all the water is absorbed. Pour cooked teff into the bottom of a casserole dish or large pie pan. In a large bowl mix together the tofu, vinegar and herbs, adjusting the seasoning to your taste. Heat olive oil in a saute pan over medium high heat. Add garlic and vegetables; cook until they turn their peak color. Add to tofu mixture and stir to blend. Pour the vegetable tofu mixture into the teff grain crust. Bake for 10 minutes or until the tofu turns a light brown. Price is FOB Moro, Oregon for customers purchasing the 2000 lb size Tote.
