This wine is typically one of the first reds to be bottled. The fruit is 100% destemmed and fermented slowly at cool temperatures to preserve freshness and vibrant fruit expression. It is then matured in stainless steel to maintain purity of fruit, while the grape’s natural tannins provide structure and balance. Nose:Lifted aromas of raspberry and blackberry rise from the glass, joined by notes of cocoa nib and a playful hint of bubble-gum. A subtle herbal lift of fresh basil adds an intriguing savoury edge. Palate:The palate is bright and lively, showing raspberry and bubble-gum characters layered with a thread of liquorice. Soft tannins and fresh acidity give the wine a supple texture and an easy, vibrant finish.
