Tequila Cabal Añejo 44 is the final batch produced at Tequila Las Americas in Amatitán, Jalisco, under the direction of Maestro Tequilero Héctor Dávalos. Crafted from 100% estate-grown organic Blue Weber agave matured over 6 years, this spirit undergoes meticulous production: 42-hour cooking in 32-ton brick ovens, roller mill crushing, 72-hour open fermentation in stainless steel tanks with deep well water and ambient yeast, and double distillation in stainless steel pot stills. The aging regimen is exceptionally specific—equal parts ex-Buffalo Trace and ex-Woodford Reserve tequila finished in ex-Old Forester barrels, then blended and aged 14 months in French oak before proofing to 44% ABV. The nose reveals confectionary aromas of plantain, marzipan, and toasted marshmallow. The palate unfolds with dried cherry, black pepper, nutmeg, caramel cream, and chickpea. This is the final release to feature Cabal's iconic "horse head" bottle design—future releases will reserve this design exclusively for private barrel selections.
