Occhipinti's 100% Nero d'Avola, from bush trained vines averaging 35 years of age, is hand harvested and de-stemmed before going through a wild fermentation in giant concrete tanks before being matured in even larger Slavonian oak botti for 22 months. Arianna Occhipinti is the neice of Giusto Occhipinti of Azienda Agricola COS. When Arianna was 16, she knew nothing about wine but was asked by her uncle to help him out for a few days. She fell in love with winemaking and learned many of the practices that she continues to this day from him—organic and biodynamic farming and wild fermenting. She went to university to study viticulture and viniculture, but butted heads with much of her school teachings, which favored the heavy interventionist methods of mass production. But Arianna was undeterred in her passion and set out to produce her own minimal intervention wine similar to her uncle. By 2014, she had her own cellar, and was making a name for herself, and her reputation has only continued to increase.
