A cut for people who love real steak flavor—honest, hearty, and made to be shared. The Vacio is a prized South American cut known for its bold beefy flavor, satisfying chew, and versatility on the grill. Cut from the flank near the belly, Vacio has a beautiful balance of lean meat and natural fat that bastes the steak as it cooks, delivering rich flavor without being heavy. This cut shines over an open flame or cast iron—best cooked hot and fast, then sliced thin against the grain for maximum tenderness. It’s a favorite in Argentine asado, but just as at home in fajitas, steak salads, or rustic family dinners. Large avg weight: 6-7 lbs Monster avg weight: 12-14lbs (1 vacio steak per package) Why you’ll love it: Deep, beef-forward flavor Naturally juicy with a tender bite when sliced correctly Perfect for grilling, broiling, or pan-searing Excellent alternative to flank or bavette steak Cooking tip:Season simply with salt, cook to medium-rare or medium, rest well, and slice thin across the grain.
