Hand-picked in two passes to balance brightness with depth, the fruit was handled gently in small open fermenters, with clever use of whole bunch fermentation and extended maceration to build texture, fragrance, and finesse. In the glass, it’s a vibrant mix of red fruits, lavender, and a hint of savoury spice. Think red licorice and raspberry upfront, unfolding into earthy, graphite tones with a peppery edge.
