Lesson 1 - Franz Haas, Pinot Grigio 2019 Not your average Pinot Grigio; this Italian beauty is herbaceous, earthy, and sweet. Notes of lime blossom will pair wonderfully with the crab and chilli. Lesson 2 - Massolino, Dolcetto d’Alba 2019 Northern Italy’s most iconic producer, Massolino’s Dolcetto is juicy, fresh, and fruity. Supremely drinkable, it’s the perfect Summer accompaniment to Theo’s rich wagyu ragu. Lesson 3 - Villa Bucci, Verdicchio Classico Superiore 2019 A rare wine from the Bucci family’s old vines, this complicated white is layered with apples, almonds, and wildflowers. Will add so much complexity to Theo’s ravioli ai frutti di mare. Lesson 4 - Antonella Corda, Cannonau di Sardegna 2019 A classic cannonau; aromas of cherries, raspberries, and blackberries will match up to the buttery veal and pancetta tortelli. There’s a spicy hint of white pepper which will season Theo’s porcini sauce.
