Coopedota R.L. is one of the most iconic coffee companies in Costa Rica, and are backed by over 1,160 farming families. Rolando Fonseca and his father Higinio Fonseca, the owners o f “El Encanto” have been part of the Cooperative since the late 1970s. They visit the farm daily with the goal of producing high-quality, environmentally friendly coffee. Cherries are picked only when deep red, then delivered to a separate collection area at the Coope Dota mill, where the lots are kept separate to maintain traceability. The cherries are then washed and floated before a mechanical pulping that leaves 5-10% of the mucilage intact, before being dried on beds in the greenhouse, with everything carefully controlled until moisture is 10-11%.
