The palate is defined by its freshness, medium body, and a crisp, energetic acidity that gives the wine excellent length and a flinty, reductive character. As its name suggests, "Patchwork" is a blend of Chardonnay from different plots with a mix of clay and limestone soils. The vinification is a natural, hands-off approach. Grapes from old vines (up to 60 years old) are hand-harvested and fermented with native yeasts. The wine is aged for approximately 12 months in French oak barrels, with a small percentage of new wood. The barrels are topped up (ouillé) to prevent oxidation, allowing the wine to showcase a pure, fruit-driven, and mineral style, a hallmark of Tissot's "ouillé" Chardonnays. Show more
