The fruit comes from a mix of clay and limestone soils, utilizing vines up to sixty years old. Fermentation occurs spontaneously with native wild yeasts in neutral French oak barrels. Following the topped-up method known as ouillé, this cuvée eliminates oxygen contact to preserve a crisp, non-oxidative varietal expression. It pours a pale straw color, opening with focused aromatics of green apple, lemon citrus, and raw hazelnut. The palate is medium-bodied and dry, balancing orchard fruit flavors with a sharp, saline acidity. Subtle notes of cashews, wet stone, and light matchstick reduction emerge as the wine opens up. A texturally driven mouthfeel gives the wine an elegant structure that never feels broad. It concludes with a clean finish, leaving a long, mouthwatering impression.
