He has almost 50-year-old vineyards and gradually tries to restore them or, if there's any chance to repair them, then plant completely new ones.Tomáš produces wines in small batches with a focus on quality. The entire annual production is aged in different wooden barrels (acacia, American oak, Czech oak, or French oak) for different lengths of time, however at least 10 months. He does not add to wine anything apart from very small amounts of sulphur before bottling.What you get is textured, supple Grüner Veltliner with depth and character.
