As a PDO protected cheese, Tomme d'Abondance can only be made within a certain geographical area, using only traditional methods of manufacturing. The texture is creamy and supple, and the cheese is a warm golden colour. Tomme d'Abondance is a strongly aromatic cheese, with a nutty aroma. And its flavour is also quite intense, with sweet, buttery, fruity, hazelnut notes and a slight acidity. The sweetness and acidity of the cheese offer a perfect balance, and there is a noticeable, lingering aftertaste. Pair with a light Pinot Noir.
