Domaine Matassa, one of the most in-demand wineries in the natural wine scene, is the Rousillon wine estate of Tom Lubbe, who is at the absolute forefront of the zero/zero moment, which insists on the exclusion of adding sulphites at any stage in the winemaking process. His Coume de l'Olla Blanc label is a whole cluster fermented, natural wine produced from Macabeu, Muscat of Alexandrie, and Muscat Blanc à Petit Grains grown on his vineyard of the same name, and which was fermented for two weeks before maturing in concrete vats.
