Perry is cider's quieter cousin, made from pears rather than apples, and Torch is Yuchen's take on it. FARMentation works beyond the vine as readily as with it, fermenting the frui t of the Yunnan highlands with the same natural, minimal hand: wild yeasts, nothing added, bottled honest. Expect ripe pear and orchard blossom, a dry and gently sparkling frame, and a clean, brisk finish.
