Trahanas is the "crunchy" pasta with vegetables. An ancient recipe that still holds an important place in every greek household. Usually made out of grain and fermented milk or yog urt. Laid for days on clean sheets to dry. This version though is vegan. Trahanas can be cooked as a thick soup by adding it to stock, water, or milk, and simmering.
