The smell in the kitchen when the oil first warms up is a real air freshener! Tasting Notes: The Trespaldum Biologico explodes with aromas of cut grass, tomato leaves, and artichokes. From there, it hits the palate with an herbiness and continues through with a medium spiciness. The thing we really like is the mild bitterness - a sort of chicory element - that arrives in the palate only after 5-7 seconds. This allows the piquancy to pass and leaves the mouth with a really nice, fine dryness.
