Tri-tip comes from the bottom sirloin and gets its name from the distinctive triangular shape of the whole muscle. It's a cut that's much more familiar in parts of the United States — particularly California — than it is in Canadian meat cases, but there's a good reason it has such a loyal following. Tri-tip is lean, tender and packed with beefy flavour. Canada Beef describes tri-tip grilling steaks as a premium cut that resembles striploin, with good beef flavour and plenty of versatility. A whole tri-tip isn't uniform in shape — it's literally a triangular muscle. Rather than forcing every portion to look identical, our butchers break it down to get the best steaks from the entire cut. The flats are wider and more traditionally steak-shaped, while the rounds are smaller in diameter and thicker-looking.
