The Xiro Gyuto is a true chefs knife. When I was cooking professionally I kept knife very similar to this on the line with me every night. You can do prep on the heel, go between b ones with the tip and slice proteins in one pull. Made from 8670 High Carbon Steel and weighing in at 180g, a 216mm cutting edge and a 356mm over all profile. I love this knife, if I only had to choose only one to cook with it would be this one.
