Adelaide Hills Story: One of the more intriguing wines created in biblical times was the ‘Tzimmukin’, using slightly dried grapes to increase strength and longevity. At K1 we have captured the essence of this ancient technique by slowly air drying our best parcels of Shiraz and Cabernet Sauvignon in baskets to produce a quintessential Australian blend. Nose: This wine is dark and intense with aromas of black cherry, plum, eucalypt and black olives with savoury spice notes of cloves and cinnamon. Palate: The palate is ripe, smooth and full-bodied with additional aromas of blackcurrant. The tannins are big, lush and balanced, followed by a lengthy finish. Food Pairings: Be daring and try this wine with an exotic African kudu fillet with a creamy mushroom sauce. Oak Maturation: 20 months in seasoned French oak.
