ULTRA-TEX 4 is a premium cold water swelling modified food starch derived from waxy maize. It is a white to off-white powder and is particularly well suited for instant food preparations subjected to severe processing conditions. Dispersions of this product have a smooth, short texture and excellent sheen, and it imparts a rich creamy mouthfeel to prepared foods. An ideal application is the preparation of instant salad dressings. Ultra-Tex 4 thickens without cooking and holds up under high shear, high heat, and low pH, which suits cold processed dressings, sauces, and fillings. Because it is a pregelatinized starch rather than a hydrocolloid, it is not a one for one replacement for xanthan gum: dosage, mouthfeel, and freeze thaw behavior all differ, so formulas need to be reworked rather than swapped.
