Unit is an ale brewed with oyster shells. The ale was brewed, as schiste sans schiste, in February 2023 with Organic Red Beaufort wheat and Organic heritage barley wholly fermented by a diversity of yeasts and bacteria collected from native flowers from NSW. The wort was boiled with leftover oyster shells from Poly Resturant, Surry Hills. Following primary fermentation it matured in oak for two years and seven months. It was bottled with raw, unheated Blue Mountains Polyflora wild honey from naturally formed, bee-friendly Warré hives from Tim and Emma Malfroy and allowed to naturally condition and carbonate before release. I think the first time we made it we must have sent kegs overseas and it stuck in peoples minds. For a beer we;'ve really only brewed twice, and bottles three times, it seemed to gather a following. I adore the viscosity of this beer that mid-palate weight is just so unique and something I search for in the white wines I enjoy driniking.
