This universal / traditional cheese knife is made using high carbon stainless steel X50MoV15 and heat treated to a Rockw ell hardness of 58, giving it a razor sharp edge that is also durable enough to withstand a professional setting. Using STOSH workshop's Yorkshire oak for the handles, a full tang blade and brass rivets, these professional standard knives are made in collaboration with renowned knife maker Samuel Staniforth. Based in Sheffield, Samuel Staniforth is a traditional, family-owned company that has over 150 years of experience in the design and manufacture of forged cutlery.
