The Sujihiki is a slicer, meant for passing through proteins with a single cut. There is plenty of knuckle clearance for a hammer grip and at 242mm can tackle even large proteins. Made from Damascus cladding over a 1095 core finished with a jewelers etch (no oxides) at 62HRC, the handle is Sonoran desert ironwood with a buffalo hot ferrule. It weighs in at 153g. Show more
