Our steak tips are USDA prime grade, and hand-cut from the flap steak. They are considered the best cut for marinade absorption. We do not needle our steak tips, their flavor and t exture requires no alterations. Wet aged for 21 days. Less than 5% of beef graded in the USA reach the Prime standard. The grade is given for the high amount of marbling found within the beef. All cuts are hand-selected and cut by our experienced butchers.
