Story Vacuum brewing—changing the way we make coffee for the better Coffee has been around for centuries, but the way we brew coffee hasn't changed much in a long time. So the question has to be asked: is the industry done innovating? According to Eduardo Umaña, the answer is no. He had an idea for a method of brewing that used a vacuum pump to brew coffee, and soon created VacOne—the world's first electric vacuum brewer. Featuring VacTec®, a patent pending brewing technology, this coffee maker uses air and negative pressure to produce smoother, more balanced coffee and cold brew in only 4 minutes.
