A new pet nat of supreme refreshment, made with 70% Gros Vert, an obscure grape not often cultivated for winemaking that Val purchases from a neighbouring organic grower in Luberon . It can be harvested very late in the season whilst retaining high acidity and, as its name suggests, an underripe, green character. The splash of pink comes from the remaining 30% Grenache, bringing red berry fruits and a little spice. Peachy stone fruit and green strawberry leading into a herby, amaro finish, afloat on lively, frothy bubbles that fizz with all of the imperfect VDC charm.
