Spontaneous fermentation occurs with native wild yeasts in large, neutral Italian oak vats without temperature control. The wine is aged for more than a year in these traditional casks and bottled entirely unfiltered to protect its natural structure. It pours a medium-dark raspberry-pink color, opening with complex aromatics of sour cherry, pomegranate, and dried mountain herbs. On the palate, a medium-bodied frame balances concentrated red fruit flavors with a savory, texturally dense core. A sharp vein of natural acidity runs through the center, keeping the fluid mouthfeel crisp and energetic. Fine, chalky tannins provide an underlying framework that avoids simple fruit sweetness. It finishes bone-dry and persistent, leaving a mouthwatering trace of crushed flint.
