Boterkoek is the taste of a Dutch grandmother’s kitchen. It is wonderfully simple and completely unapologetic about its main ingredient: butter. This is denser than an English spon ge cake but softer than a Scottish shortbread biscuit. It is a rich, heavy, sweet cake with a chewy edge and a slightly gooey center.
