After milling in Popayán, it's decaffeinated nearby at Descafecol in Manizales, the only major decaffeination facility in South America. Using a natural sugarcane decaffeination and fresh water from a volcano, caffeine gets removed gently while preserving the coffee's natural sweetness and character, reducing the carbon footprint of moving coffee across continents for processing. Sourced through our import partner, Cofinet, this lot comes from 75 smallholder farmers who received up to a 20% quality premium for exceptional coffee. We're roasting it light to preserve the high-elevation brightness and sweetness that the sugarcane process enhances, bringing forward notes of caramel, vanilla, and malt.
