Short maceration with whole bunches in stainless steel tanks, where fermentation begins naturally and spontaneously, without the addition of yeast or any other product. The fermentation temperature is not manipulated, but the cool autumn nights are exploited (the winery is located at an altitude of 1,280 meters). Aged for one year in European oak barrels in an underground cellar. Malolactic fermentation also took place naturally during the aging period. No sulfur dioxide* or any other additive or preservative was used. Unclarified. Lightly filtered before bottling to prevent the entry of solid particles.
