9 fruited modern sours from Portobello, Edinburgh Vault City Brewing is an Edinburgh-based brewery making heavily fruited, modern sour beer. Since starting out in a flat kitchen in 2018, they have grown into the UK's largest sour beer producer, brewing close to half a million litres a year on the same patch of Scottish coastline. The method is mixed fermentation - co-fermenting lactobacillus with saccharomyces to build a smooth, complex acid base - then piling in real fruit at levels that border on the ridiculous. Strawberry Sundae, Cloudy Lemonade, Triple Fruited Mango. Pina Colada sour. Breakfast waffle sour. The flavour combinations read like a fever dream, but the balance is always there underneath.
