Beverage-making Notes Our goal was to recreate the experience of a Niagara Sparkling Riesling, using local, craft, non-alcoholic ingredients. We picked Riesling from Niagara very e arly and pressed it to make our Verjus (literally translated as “Green Juice”). We then made a small batch infusion with green tea, fruits and botanicals.
