Ca’Viola’s “VILOT” is a fresh, fruity, floral and highly pleasurable red wine made from 100% Dolcetto, from sandy-silty and calcareous soils. The ‘little brother’ of the more compl ex Barturot. For Ca’Viola’s philosophy it embraces the archetype of everyday wine, quick and ready to drink. Harvested first decades of September, the vinification process starts with maceration and fermentation for about 10 days in heat-controlled tanks. Ageing and refinement for a period of 10 months in steel. The appearance shows a deep ruby red color. The nose plays on fresh fruity notes and reveals pleasant notes of amarena-cherry and blackberry on the finish. The palate is agile, very smooth and balanced. A fresh, dynamic and highly gratifying sip, making this Dolcetto suitable for all palates. Food match: Enjoy this every-day red beauty with cold-cuts aperitifs, risotto ai funghi porcini, grilled meat, fresh-to-medium cheeses. Recommended serving-temperature of 14/16°C. Show more
